Would anyone know for certain what the stock thermostat for a
03 indmar TBI engine would have been?
143 or 160

I understand that either would work.
I have been concerned about the operating temp of my boat. I installed a new 160 this spring and new impeller. I let the impeller go a little long and it was missing some pieces. Then it dawned on me that my "problem" may well be self inflicted because I possibly installed different temp therm.
So does anyone know for certain what would have been the stock therm in a
03 TBI Indmar no shower no heater?

I don't know which thermostat, but since the raw water pump is before the thermostat, it is not effected by it's temperature.

^ that isn't what I am saying.
I am saying my former impeller was a bit shredded and I was concerned that bits may be clogging something causing the rise in temp. I checked the tranny cooler and it is clear.

If the temp is holding at 160 then it has a 160 thermostat. If you had a blockage you'd not be seeing firm temps, more likely raising temps.
If you can give me your engine serial number I'll let you know what was stock at build (I'm an Indmar dealer), they used both.

Not steady at 160. 170ish and moves around.
used to be rock solid.
Where do they badge the engines?

If it's moving around a lot you may have just gotten a sticky thermostat- you could pull it out and test it in some boiling water to ensure it's open/closing properly.
160 should be correct- Indmar essentially uses that thermostat across the board:
Indmar part# for raw cooled is: Indmar S985009.
If your current thermostat is opening and closing properly, it's possible that some chunks of impeller might be blocking a coolant passage and causing the temp to do funny things.
